A bakery in Tapanila, Helsinki called 🍰Rönttösrouva🎂 lost a huge chunk of their business in a blink of an eye due to the cancellation of all parties and gatherings because of the #coronavirus situation here in Finland.
However, these smart and obviously humorous people quickly came up with a product that could save the day - or the whole business, actually:
Their "toilet paper cake" is oat based with a passionfruit filling and, according to several news outlets, is selling like hell.
The bakery has also enhanced their home delivery capacity and according to the owners is working long hours to keep up with the online orders !

Last time I forgot the #recipe @Fernando Santagata for the poppy #cake

200g fine ground poppy seeds (not baking-ready poppy seeds,) I used this one
150g sugar
5 eggs
80g ground nuts or almonds (I prefer almonds)
1/2 tsp grated lemon peel (Either fresh or some aroma powder)
A handful of raisins
A bit of rum
2 grated apples
  • Put the raisins in a pot with a bit of rum.
  • Separate the eggs and beat the egg white until stiff (Pro tip: first beat the eggs white, so you don't have to clean the mixer in between)
  • Cream butter and sugar, then stir in the egg yolks one after the other
  • Add the poppy seeds, almonds/nuts and lemon peel and mix
  • Add the raisins and the grated apples
  • Carefully fold in the beaten egg white
  • Preheat the oven to 170°C (top and bottom heat). Grease a springform pan
  • Pour the dough into the mould (form) and bake for about 50 minutes
Leftovers of the cake can be kept in the fridge in wrapped plastic or you freeze them.
